INGREDIENTS:

  • Lamb skewers

  • Big Mama’s Indo-Moroccan Dry Rub

  • 1-2 tbsp Olive oil

  • Couscous

  • Red onion, diced

  • Tomato, diced

  • Garlic, minced

INSTRUCTIONS:

  1. Coat skewers in Big Mama’s Indo-Moroccan Dry Rub. 

  2. Heat BBQ to 500°. Sear each skewer for 30 seconds and let rest.

  3. Prepare couscous using 1:1 ratio of stock to dry couscous. Boil couscous, cover and remove from heat. Let sit 5 minutes and fluff. 

  4. Add olive oil, diced tomato, red onion, garlic, and Indo-Moroccan rub to taste. For an added kick try adding a pinch of cayenne pepper. Toss and enjoy hot or cold.
