Big Mama's Cuban Criollo Dry Rub with a touch of lemon makes for delicious, easy-to-make Greek chicken skewers.

INGREDIENTS:

  • 4 chicken breasts, cubed

  • 5-6 tbsp. Big Mama's Cuban Criollo Dry Rub

  • 3-4 tbsp. olive oil

  • 2 tsp. black pepper, fresh cracked

  • 1 tbsp. parsley, fresh chopped

  • 1 lemon, zest and juice

  • pinch of salt

INSTRUCTIONS:

  1. Combine olive oil, Big Mama's Cuban Criollo Dry Rub, black pepper, parsley, salt, and zest & juice of lemon to create marinade. 

  2. Toss cubed chicken in marinade and let marinate in fridge minimum 1 hour, preferably overnight.

  3. Pre-heat grill to low heat (200-250°F). Skewer marinated chicken. Grill skewers for 15 minutes per side, or until done. Serve with tzatziki and your favourite Greek side.
