Big Mama is throwing it back to her childhood days at the cottage with her Miramichi Bay Crusted Rockfish recipe.

2 tbsp butter, melted
1/3 c. bread crumbs or panko
1-2 tbsp Big Mama’s Miramichi Bay Dry Rub
1/4 c. vegetable oil
Mix dry rub and bread crumbs together on a large plate or in a shallow container.
Pat fillet dry. Coat fillet with melted butter on both sides. Coat fillet in breadcrumb mixture.
Heat pan over medium-high heat, and add oil. Fry fish fillet until cooked, 2 minutes per side. Serve with your favourite side and lemon wedge.
