INGREDIENTS:

  • Rockfish Fillet

  • 2 tbsp butter, melted

  • 1/3 c. bread crumbs or panko

  • 1-2 tbsp Big Mama’s Miramichi Bay Dry Rub

  • 1/4 c. vegetable oil

INSTRUCTIONS:

  1. Mix dry rub and bread crumbs together on a large plate or in a shallow container. 

  2. Pat fillet dry. Coat fillet with melted butter on both sides. Coat fillet in breadcrumb mixture. 

  3. Heat pan over medium-high heat, and add oil. Fry fish fillet until cooked, 2 minutes per side. Serve with your favourite side and lemon wedge.
