Big Mama's easy-to-make take on a BBQ favourite that's sure to please at your next cookout.

5 lbs Pork Shoulder (for best results, use bone-in)
2 cans whole or diced tomatoes
1 tin Allens Apple Juice
Big Mama's Big Smokin' Mama Dry Rub
Big Mama's Chipotle BBQ Sauce
Rub pork shoulder liberally with Big Smokin' Mama Dry Rub. Let marinate in fridge for several hours, preferably overnight.
Place pork shoulder in roasting pan.
Pour in tomatoes (crush the whole ones with your hands) and enough Apple Juice to just cover pork.
Cover with lid or tin foil and roast at 325°F for approx 5-6 hours. Flip halfway and check to ensure liquid hasn’t evaporated. Add more liquid, if needed.
Pork is done when it pulls apart easily (bone slides out easily). Let cool, if needed.
Pull pork to desired style.
Pour on Big Mama's Chipotle BBQ sauce to desired sauciness and toss well.
Serve with fresh buns, coleslaw and more Chipotle BBQ Sauce.
