Delicious Mocha Java dusted pork loin, stuffed with sage and apricots.

INGREDIENTS:
5 lb bonless Pork Loin
Big Mama's Cuban Criollo Dry Rub
Big Mama's Mocha Java Dry Rub
salt and pepper
1 c. apricots, rough cut
1 c. sage, chiffonade cut
1/2 c. pumpkin seeds, toasted
INSTRUCTIONS:
Zig zag cut pork loin into three (3) sections. Dust inside with Cuban Criollo dry rub, salt and pepper.
Spread pumpkin seeds, sage and apricots over inside.
Roll up and tie every 1/2"
Rub loin with Mocha Java dry rub, and allow to sit in fridge for minimum 1 hour (preferably overnight).
Bring loin to room temperature.
Roast at 400°F for 45 minutes, or until internal temperature reaches 145°F. Slice and serve.
