SOUTHWEST CHICKEN NACHOS
Still in need of game day (or any day) snack ideas? Try Big Mama’s Southwest Chicken Nachos.

1 tbsp Butter
2 tbsp Vegetable Oil
2 tbsp garlic, minced
1 lb ground meat (we’re using chicken)
1 medium onion, French cut
1 1/2 tbsp BIG MAMA’S CUBAN CRIOLLO DRY RUB
1 1/2 tbsp BIG MAMA’S SOUTHWEST DRY RUB
2 tbsp tomato paste
Salt and pepper, to taste
Toppings: Olives, deep fried jalapeños, green onion, jalapeño jack cheddar.
Sauté the onions and garlic in butter and oil.
Add chicken and spices. Cook and crumble.
Add tomato paste and salt and pepper to taste.
Top nachos with meat, cheese and your favourite toppings. Bake in oven or BBQ/smoker ‘til cheese is melted. Garnish with green onion, salsa, deep fried jalapeño, and sour cream.
