INDO MOROCCAN LAMB SKEWWERS
Indo-Moroccan Lamb Skewers paired with Moroccan Pearl Couscous.
Big Mama’s Indo-Moroccan Dry Rub
1-2 tbsp Olive oil
Red onion, diced
Coat skewers in Big Mama’s Indo-Moroccan Dry Rub.
Heat BBQ to 500°. Sear each skewer for 30 seconds and let rest.
Prepare couscous using 1:1 ratio of stock to dry couscous. Boil couscous, cover and remove from heat. Let sit 5 minutes and fluff.
Add olive oil, diced tomato, red onion, garlic, and Indo-Moroccan rub to taste. For an added kick try adding a pinch of cayenne pepper. Toss and enjoy hot or cold.
