INGREDIENTS:

  • 2 tbsp Big Mama’s Green Thai Curry Paste

  • 1 red onion, sliced

  • 1 red bell pepper, sliced or diced

  • 2 c. coconut milk

  • 2-3 tbsp vegetable oil

  • 1 lb chicken, sliced and blanched

  • Cilantro, to garnish

INSTRUCTIONS:

  1. Sauté onions and peppers in hot oil. 

  2. Add blanched chicken and curry paste. Stir and cook (1 minute). 

  3. Add coconut milk and simmer (5-7 minutes). 

  4. Plate with rice and garnish with cilantro. For a thicker sauce, use coconut cream.
