GREEN THAI CURRY
Super easy, authentic Thai curry. Perfect for weeknight meals!

1 red onion, sliced
1 red bell pepper, sliced or diced
2 c. coconut milk
2-3 tbsp vegetable oil
1 lb chicken, sliced and blanched
Cilantro, to garnish
Sauté onions and peppers in hot oil.
Add blanched chicken and curry paste. Stir and cook (1 minute).
Add coconut milk and simmer (5-7 minutes).
Plate with rice and garnish with cilantro. For a thicker sauce, use coconut cream.
