GREEK CHICKEN SKEWERS
Big Mama's Cuban Criollo Dry Rub with a touch of lemon makes for delicious, easy-to-make Greek chicken skewers.
1 1/2 HRS
4 chicken breasts, cubed
5-6 tbsp. Big Mama's Cuban Criollo Dry Rub
3-4 tbsp. olive oil
2 tsp. black pepper, fresh cracked
1 tbsp. parsley, fresh chopped
1 lemon, zest and juice
pinch of salt
Combine olive oil, Big Mama's Cuban Criollo Dry Rub, black pepper, parsley, salt, and zest & juice of lemon to create marinade.
Toss cubed chicken in marinade and let marinate in fridge minimum 1 hour, preferably overnight.
Pre-heat grill to low heat (200-250°F). Skewer marinated chicken. Grill skewers for 15 minutes per side, or until done. Serve with tzatziki and your favourite Greek side.
