BUTTER CHICKEN SCALLOPS

INGREDIENTS:

  • 1 lb sea scallops

  • 1-2 tbsp oil

  • 1-2 tbsp butter

  • Big Mama's Butter Chicken Dry Rub

INSTRUCTIONS:

  1. Remove the little piece of muscle at the side of each scallop and discard.

  2. Pat scallops dry and dust top and bottom with Big Mama's Butter Chicken Dry Rub.

  3. Heat pan (cast iron is best) until it's hot -  smoking point. Add 2 tbsp of oil. 

  4. Sear scallops for about 2 minutes on the first side, then add a small amout on butter (1-2 tbsp). 

  5. When scallops are a dark red colour, flip over and cook another 2 minutes.

  6. Remove from pan and serve with seasoned rice and salad.
